The Humble Macaron

Macarons were first described in Italian cookbooks in the 16th century but may date back as far as the 8th century. They are made of 3 basic ingredients – egg whites, confectioner’s sugar and almond flour (you can add more things if you wish).

Macarons are characterized by their “feet” (pieds) or the ruffles around the edges. These days, they are most commonly served as two cookies held together by jam, ganache, buttercream or another filling, and can be made in all kinds of colors.
